What about Spelt?

Spelt flour is a whole grain flour and has begun to become very popular. Its flavour profile is nutty and semi-sweet. It is not gluten-free and can be used in many recipes where wheat flour would be used. Spelt flour is lower in calories and higher in protein. Serves 4
1 ¾ cups spelt flour
4 tbsp sugar
1 tbsp baking powder
1 tsp Vanilla extract
¼ teaspoon salt
1 egg slightly beaten
½ cups of non-dairy milk
3 tbsp cooking oil
¼ cup fresh blueberries
1. Stir together flour, sugar, baking powder, and salt in a large bowl and set aside.
2. Mix egg, vanilla, milk, and oil in a separate bowl. Combine the wet and dry mixes and stir
until just moistened (still lumpy).
3. Heat a skillet on medium heat and grease the pan with oil or butter. Add the desired
amount of pancake batter and wait for the bubbles to rise.
4. When the bubbles cover the whole surface of the Pancake, and the opposite side is golden
brown, flip the pancakes and cook the other side till it is cooked.
5. Plate the pancakes and top with fresh blueberries and warm syrup.
Serve immediately.
